Zusammenfassung:PROBLEM TO BE SOLVED: To provide a method for eliminating smell from fish meat comprising subjecting fish meat to organic solvent treatment with ethanol or the like while maintaining solubility of the fish meat containing soluble muscle protein. SOLUTION: The method for eliminating smell from fish meat comprises the following process: crushing fish meat, mixing the crushed fish meat with reducing saccharide, dehydrating the mixture of the crushed fish meat and the reducing saccharide, maintaining the mixture under such a temperature condition that the muscle protein falling in the mixture is prevented from denaturation while keeping the water content in the mixture in ≤6 wt.% so as to generate fish meat containing the soluble muscle protein where the reducing saccharide is combined with the muscle protein, mixing fish meat containing the soluble muscle protein with the organic solvent, and maintaining the mixture of the fish meat containing the soluble muscle protein and the organic solvent at a temperature where the solubility of the fish meat containing the soluble muscle protein is not reduced.
