Zusammenfassung: | PROBLEM TO BE SOLVED: To provide a method for producing a distilled liquor, which produces Shochu (Japanese distilled spirit) having crispness and body free from especially an offensive smell and a hot taste. SOLUTION: The method for producing Shochu (Japanese distilled spirit) comprises: a first preparation process for inoculating steamed rice with a white koji mold and adding water and yeast to the steamed rice inoculated with the white koji mold to give a primary unrefined sake; a second preparation process for mixing the primary unrefined sake with water and a steamed main raw material and fermenting the mixture to give a secondary unrefined sake; and a third preparation process for inoculating steamed rice with a yellow koji mold to give malted rice, adding the malted rice to the secondary unrefined sake and fermenting the mixture to give a tertiary unrefined sake and distilling the fermented tertiary unrefined sake.
