CURCUMINE REDUCTASE

PROBLEM TO BE SOLVED: To provide a curcumine reductase having a specific amino acid sequence derived from the epithelium of porcine small intestine. SOLUTION: This method for obtaining the curcumine reductase is provided by performing the fractionation of centrifuged supernatant part of the epithelium of the porcine intestine by using ammonium sulfate, separating 1 or ≥2 fractions having high enzyme activities, separating the fraction having high enzyme activity by subjecting the separated fractions with gel filtration, subjecting the separated fraction having the high enzyme activity with SDS-polyacrylamide gel electrophoresis to confirm its molecular weight and purity, then subjecting it with a secondary electrophoresis to confirm that the enzyme is a basic protein, then subjecting the gel-filtered fraction having the high enzyme activity with native-polyacrylamide gel electrophoresis and cutting out a band having the high enzyme activity.
