Zusammenfassung:	PROBLEM TO BE SOLVED: To provide a safe palate feeling-improving composition easily imparting desired palate feeling to food. SOLUTION: The palate feeling-improving composition is obtained through mixing protein-containing food with plant extract at such a rate as to have 0.05-1 wt.% of polyphenole in the plant extract based on the protein, and aging the mixture.
