Zusammenfassung:	PROBLEM TO BE SOLVED: To provide ume (Japanese apricot) fine powder for health food comprising health food utilizing ume, in particular, effectively coping with active oxygens (free radicals) generated in the body as principal cause of cell destruction, aging and/or disease so as to prevent the aging and/or the disease. SOLUTION: The ume fine powder for health food comprises extract residue (ume flesh, peel, nut and kernel) obtained by pickling natural ume and/or cultivated ume using a reducing salt presenting negative values of oxidation-reduction potential for a prescribed period of time followed by eliminating the extracted essence, and is produced by drying the extract residue and subjecting the residue to pulverization processing.
