Zusammenfassung: | PROBLEM TO BE SOLVED: To provide a flavor/taste improver produced by using milk, defatted milk, whey and the like as raw materials, and imparting body taste and delicious taste to food and drink: to provide a method for producing the improver: and to provide food and drink containing the flavor/taste improver. SOLUTION: The flavor/taste improver is obtained through the following process: treating a membrane-separated penetrated liquid of milk, defatted milk or whey with protein splitting enzyme; passing the liquid through a column so as to make the column adsorb usable components; thereafter further adding a hydrophilic organic solvent to the column to elute usable components from the column; treating the liquid with a nano-filteration film (NF) to obtain the penetrated liquid.
