Zusammenfassung:PROBLEM TO BE SOLVED: To provide a method for efficiently producing a white dried bean curd having improved quality and increased diversity from the viewpoint of appearance and component. SOLUTION: The method for the production of dried bean curd comprises the addition of a nutrient salt of calcium, iron, magnesium, zinc, etc., to soya milk to increase electrical conductivity and the heating of the milk with electric current. The production method: (1) suppresses the discoloration of soya milk and reduces the energy consumption by the quick increase of the soya milk temperature; (2) mitigates the heating condition of soya milk to suppress unnecessary discoloration and obtain dried bean curd having uniform thickness because of the uniformized temperature distribution of a film-forming tank; (3) enables delicate temperature control and temperature regulation meeting the change of soya milk in the film-forming stage and the production of bean curd having light color; (4) enables the production of light-colored dried bean curd in high yield by the increased film-forming speed and lowered film-forming temperature; (5) reduces the generation of waste liquid; and (6) produces a dried bean curd product having good color in high yield by decreasing the film-forming temperature in two stages, multiple stages or in a linearly decreasing pattern.
