Zusammenfassung:	PROBLEM TO BE SOLVED: To provide a method for preparing a valuable nitrogen-containing compound from bony parts of fish. SOLUTION: A method for treating bony parts of fish comprises boiling collected bony parts of fish, subjecting the boiled product thus obtained to solid-liquid separation to collect boiled solid and stick water, centrifuging the stick water in a high temperature condition to collect protein liquid, membrane filtering at least part of the protein liquid thus obtained in multistages to collect collagen from the filtrate thus obtained, and further collecting amino acid by ion exchange from filtrate obtained in the end of the membrane filtration process.
