Zusammenfassung: | PROBLEM TO BE SOLVED: To provide a method for producing an acid oil-in-water emulsified food excellent in emulsion stability even if preserving for a long period. SOLUTION: This method for producing the acid oil-in-water emulsified food comprises using as an emulsifier yolk treated with phospholipaze A. Furthermore, the method comprises subjecting a water phase mixed with the yolk treated with phospholipaze A and an oil phase mixed with edible oil and fat to emulsification treatment in a condition of being ≥0.5 higher than pH of the product to produce an oil-in-water emulsified product, and adjusting pH through the addition of an acid material.
