STEAM COOKER AND STEAM-COOKING METHOD

PROBLEM TO BE SOLVED: To provide a steam cooker capable of preventing boiling-over by controlling exhaust steam and infiltrating cooking liquid into ingredients well by boiling down the cooking liquid. SOLUTION: The steam cooker is provided with a treatment tank 3 which can be sealed, a steam supply means 4 for supplying steam into the treatment tank 3, and exhaust means 5 and 6 of exhausting the steam inside the treatment tank 3. The exhaust ability by the exhaust means is changeable. The exhaust means is a steam exhaust means 5 for leading out the steam from the inside of the treatment tank 3 pressurized by steam supply by the steam supply means 4 by utilizing a differential pressure from the atmospheric pressure or a pressure reduction means 6 for reducing the pressure inside the treatment tank 3 by sucking and/or condensing the steam. By controlling the steam exhaust means 5 or the pressure reduction means 6, the pressure inside the treatment tank 3 is reduced to a set pressure and the cooking liquid is infiltrated into the ingredients.
