Zusammenfassung: | PROBLEM TO BE SOLVED: To provide a salty-taste reinforcing method comprising a means of reinforcing salty taste of food and drink without spoiling flavor balance inherent in the food and drink: and to provide salt-reduced food and drink. SOLUTION: The salty-taste reinforcing method comprises using a sugar composition containing saccharide comprising at least disaccharide at ≥75 wt.%, having a solid concentration of 55 wt.% and a viscosity of 40-60 mPa s(millipascal second) at 20°C. Use of the sugar composition as an active ingredient for reinforcing salty taste results in reinforcing salty taste of food and drink without spoiling the flavor balance inherent in the food and drink so that the sugar composition can be usable for the salt-reduced food and drink.
