Zusammenfassung:PROBLEM TO BE SOLVED: To provide a method for producing a yeast extract capable of being widely utilized as a food raw material, a seasoning, etc., without being restricted by a food for which the extract is used, nor by a blended amount, because of scarcely forming sediment even when dissolved in high concentration, highly containing sodium guanosine 5'-monophosphate (GMP), and having peculiar taste and a good body. SOLUTION: This method for producing the yeast extract comprises treating a solution of a yeast extract material containing the GMP with a weakly acidic cation-exchange resin or an adsorbent resin, so as to obtain the yeast extract containing the GMP in an amount of ≥5 wt.% and polyamines in an amount of ≤0.02 wt.%.
