The agent for reducing a smell comprises the saccharide as an active ingredient. The method for reducing a smell derived from raw materials remaining in a product or from a production process comprises using a non-reducing saccharide and/or a reducing saccharide containing a trisaccharide-tetrasaccharide having a branch structure in a process for producing any of an enzyme, an enzyme-containing composition and an enzyme-treated product.
