Zusammenfassung:	PROBLEM TO BE SOLVED: To provide a drying method and drying equipment capable of stably and properly drying a dried object so that the dried object has prescribed moisture content after drying, even when the moisture content of the dried object before drying is rapidly changed, in the drying method for drying the dried object by feeding hot air to a drier from a hot air generator. SOLUTION: A temperature of exhaust gas at an outlet of the drier 3 is measured, a flow rate of hot air fed to the drier 2 is controlled by adjusting the quantity of exhaust gas returned to the hot air generator 2 on the basis of the temporal variation of temperature of exhaust gas, and the quantity of fuel supplied to the hot air generator 2 is adjusted to control a temperature of hot air at an inlet of the drier 3.
