Zusammenfassung: | PROBLEM TO BE SOLVED: To obtain a food material having high health-promoting effect through modifying the method for processing raw bean jam, strained bean jam, granular bean jam, or the like, having been known as a food material for e.g. highly palatable confectionery. SOLUTION: The food material is obtained by the following procedure: Raw broad beans within 12 h after harvested are boiled in water together with their shells, the shells are removed, and each appropriate amount of water and a seasoning is added to the resultant broad beans followed by heating, agitation, concentration and mashing into a paste form. By intake of this food material at 100 g/day per adult man or woman, the following nutrients can be taken: vitamin E, about 10% equivalent; vitamin K, about 20% equivalent; niacin, about 6% equivalent; vitamin B1, about 9% equivalent; vitamin B2, about 7% equivalent; vitamin B6, about 9% equivalent; folic acid, about 22% equivalent; pantothenic acid, about 4% equivalent; vitamin C, about 2% equivalent; calcium, about 3% equivalent; iron, about 8% equivalent; phosphorus, about 4% equivalent; magnesium, about 5% equivalent; potassium, about 16% equivalent, copper, about 5% equivalent; and zinc, about 4% equivalent, each based on its average necessary amount per day.
