Zusammenfassung:PROBLEM TO BE SOLVED: To provide a breadmaking method applicable to producing natural yeast bread always stably finished without depending on room temperature even when using a reservation timer in baking the natural yeast bread by using an automatic bakery machine. SOLUTION: The breadmaking method of a bakery machine having a bread case 9 for charging bread materials, a kneading function kneading the bread materials in the bread case 9, a fermentation/baking function for heating and fermenting/baking bread, and a timer function for setting a time till finishing breadmaking is provided, wherein the use amount of the natural yeast is changed corresponding to the surrounding temperature when production of the natural yeast bread using natural yeast as a bread material is performed by using the reservation timer.
