Zusammenfassung:	PROBLEM TO BE SOLVED: To provide germinated unpolished rice containing direct reduction sugars in high concentrations, excellent in palatability, and improved in cooking properties. SOLUTION: This germinated unpolished rice is structured as follows: ≥0.15 g of the direct reduction sugars is contained in 100 g of the germinated unpolished rice in dried base; and 9-40 wt.% of all the starch content is gelatinized when measuring the gelatinization degree of starch in the germinated unpolished rice by a BAP (β-amylase-prulanase) method.
