Zusammenfassung: | PROBLEM TO BE SOLVED: To provide a method for producing green tea extract from which green tea flavor is eliminated and which contains catechins at a high concentration. SOLUTION: The method for producing green tea extract comprises the following process: (A) adding 0.2-0.4 pt.wt. of mixed solution where ethanol and water are formulated at 75:25 to 99.5:0.5 per 1 pt.wt. of green tea leaves to moisturize the leaves; (B) bringing supercritical carbon dioxide where 0.02-0.04 pt.wt. of mixed solution having ethanol and water at 75:25 to 99.5:0.5 is added, into contact with the moisturized green tea leaves; and (C) extracting green tea extract using 10-150 pts.wt. of water per 1 pt.wt. of the green tea leaves after contact with the carbon dioxide.
