Zusammenfassung:PROBLEM TO BE SOLVED: To provide a method for producing scallop rice cracker for supplying to a market grilled whole scallop rice cracker which is conventionally difficult and enabling the commodity composition of rice cracker rich in variety. SOLUTION: The method for producing the scallop rice cracker 1 comprises removing bones and skin of scallops to leave only flesh, setting the temperature of each of an upper baking mold 11 and a lower baking mold 12 to 150°C-180°C through adjusting a temperature setting part (the figure is omitted) of a rice cracker production apparatus 10, setting a space between each of the upper baking mold 11 and the lower baking mold 12 of a baking mold to 2.1-3.1 mm, putting scallop flesh 2 on the lower baking mold 12, clipping the flesh with the upper baking mold 11, turning a handle part 15 in the opposite clockwise, horizontally rotating the handle part 15, compressing the product with the upper baking mold 11 and the lower baking mold 12 followed by baking, soaking the baked product in seasoning liquid or applying the liquid and drying the product by hot wind.
