Zusammenfassung:	PROBLEM TO BE SOLVED: To provide an industrial method for easily crystallizing a transglutaminase produced by microorganisms of the genus Streptomyces and a method for producing a transglutaminase preparation by including an additive in the transglutaminase crystallized by the crystallization method. SOLUTION: The method for the industrial crystallization of transglutaminase comprises the addition of sodium chloride and/or potassium chloride to crude transglutaminase produced by microorganisms of the genus Streptomyces or to a partially purified enzyme to perform the salting-out of the enzyme. The addition of the sodium chloride and/or potassium chloride may be carried out slowly to the saturated amount. Streptomyces mobaraensis or Streptomyces lavendulae may be used as the microorganism of the genus Streptomyces. COPYRIGHT: (C)2005,JPO&NCIPI
