Zusammenfassung: | PROBLEM TO BE SOLVED: To provide a fermentation method for efficiently producing a non-amino organic acid from an organic raw material such as glucose while suppressing the by-production of amino acid. SOLUTION: A non-amino organic acid such as malic acid, fumaric acid and succinic acid is produced by reacting an organic raw material with cells of bacteria having glutamic acid requiring property or treated product of the cell in an aqueous reaction liquid. More preferably, the non-amino organic acid such as malic acid, fumaric acid and succinic acid is produced by reacting an organic raw material with coryne-form bacteria having decreased lactate dehydrogenase activity and requiring glutamic acid or treated product of the bacteria.
