Zusammenfassung:PROBLEM TO BE SOLVED: To provide green tea extract treated with tannase, obtained by treating green tea extract liquid containing a lot of gallates in non-polymer catechins with tannase to control the content of the gallates and subject the green tea extract to pH adjustment; and to provide a highly concentrated catechin-containing beverage using the extract. SOLUTION: The green tea extract is obtained by treating green tea extract liquid with tannase. The green tea extract satisfies the followings: (a) non-polymer catechins are contained at 20-40 wt.% in solid, (b) gallates are contained at 40-60 wt.% in the non-polymer catechins, and (c) water solution obtained by dissolving green tea extract has a solid concentration of 2.0 wt.%. The green tea extract is formulated to obtain a beverage having the non-polymer catechin concentration of 0.05-0.5 wt.%. Such a beverage as to have good appearance and flavor in the highly concentrated non-polymer catechin-containing beverage can be obtained even when using such material as to highly contain gallates regarded as an astringent and bitter taste component as material for green tea extract, and tannase treatment results in obtaining favorably flavored green tea extract even when using the highly concentrated non-polymer catechins having gallate content required for exerting physiological effect.
