SOLUTION: The desaturase gene comprising DNA of the following (a) or (b): (a) DNA encoding the protein comprising amino acid sequences expressed by the sequence No 1 or 2, (b) DNA encoding the protein having desaturase activity comprising amino acid sequences having one or two amino acids deleted, substituted or added in the amino acid sequences of the (a).
