Zusammenfassung:	PROBLEM TO BE SOLVED: To provide a method for forming a powder from a highly unsaturated fatty acid/ascorbic acid ester being pasty and having undesirable physical properties by a simple means, to provide a highly unsaturated fatty acid/ascorbic acid ester well stabilized by being formed into a powder, and to provide a composition containing the same. SOLUTION: An emulsion is formed by mixing a highly unsaturated fatty acid/ascorbic acid ester represented by formula (I): RCO-A (I) (wherein RCO- is an acyl group derived from a highly unsaturated fatty acid; and A is an ascorbic acid residue bonded through the -O- derived from the hydroxy group of ascorbic acid) with an aqueous solution of a water-soluble excipient, and the emulsion is dehydrated and dried by spray drying.
