Zusammenfassung: | PROBLEM TO BE SOLVED: To provide a method for cultivating Shiitake (Lentinus edodes) highly containing eritadenine capable of stably supplying at a low cost the Shiitake containing more eritadenine than conventional Shiitake without using a special device, and to provide the Shiitake highly containing eritadenine obtained by the cultivation method. SOLUTION: The method for cultivating the mushroom with an eritadenine content which is higher than that of conventional Shiitake by 3-6 times comprises storing and processing Shiitake just after harvesting for 2-4 days under a highly humid environment of a humidity of 70%-90%, especially at 25-35°C and in the presence of lactic bacterium.
