Zusammenfassung:PROBLEM TO BE SOLVED: To obtain a rigor mortis retarding agent for retarding beginning or rigor off of rigor mortis of cultured fish at the time of shipping to sustain freshness, and to provide a method for retarding beginning or rigor off of rigor mortis of the cultured fish using the retarding agent. SOLUTION: This method for retarding beginning or rigor off of rigor mortis of the cultured fish comprises giving the cultured fish 1-50 mg, preferably 3-30 mg, of glutathione, especially yeast containing at least 1% of glutathione daily per kg of fish weight.
