Zusammenfassung: | PROBLEM TO BE SOLVED: To solve a problem that conventional methods in which skin of a fruit is peeled off by applying a knife to the fruit cause a large loss of flesh and are low in productivity so as not to be suitable for mass production. SOLUTION: A method for peeling a persimmon fruit has a heat treatment process, an enzyme treatment process, and an exocarp removing process, wherein the heat treatment process comprises heating the persimmon fruit with a heating means to inactivate a pectinase activity inhibitor contained in the persimmon fruit and to form at least cracks on cuticles of the persimmon fruit, the enzyme treatment process comprises impregnating the persimmon fruit 1A of which the cuticles 2 have at least the cracks formed by the heating in the heat treatment process with a pectinase to decompose exocarp tissues 3A of the persimmon fruit, and the exocarp removing process comprises removing the exocarp tissues decomposed by the pectinase in the enzyme treatment process with a removing means to obtaining the peeled fruit.
