METHOD AND SYSTEM FOR PRODUCING BREAD

PROBLEM TO BE SOLVED: To provide a method for producing bread solving the problems in terms of simplifying production equipment and achieving both safety and hygiene of the equipment in view of the fact that equipment for intermediate fermentation has been indispensable in conventional bread production line and a huge space is needed for an overhead proofer as the equipment, and to provide a system for carrying out the method. SOLUTION: The system includes a dough strip forming device for forming and discharging fermented dough in a continuous strip, a device for weighing and cutting such a bread dough strip, a rolling device for forming the cut bread dough into stick-like bread dough and a device for folding such stick-like bread dough. The resulting bread dough thus folded is charged into a bread mold in a relevant section, thereby realizing a bread line needing no intermediate fermentation equipment. COPYRIGHT: (C)2003,JPO
