Zusammenfassung:	PROBLEM TO BE SOLVED: To provide a method for concentrating a non-protein nitrogen compound derived from a milk, or L-carnitine by which the L-carnitine can be efficiently concentrated to provide the concentrate utilizable as a food, a nutrition and an L-carnitine agent, and a new way for effective utilization of a permeate which has been disposed conventionally can be opened. SOLUTION: This method for concentrating the non-protein nitrogen compound derived from the milk, or the L-carnitine is characterized in that a milk raw material including not only the milk and a milk product but also the permeate by-produced when carrying out an ultrafiltration treatment of a whey, a lactose-removed product thereof or the like is alcohol-fermented by using genus Saccharomyces yeast and/or genus Kluyveromyces yeast.
