Zusammenfassung:	PROBLEM TO BE SOLVED: To provide a method for producing a fatty acid ester of a sorbitan, characterized in that the reduced pressure reaction for obtaining the esterified product is carried out under a condition of 160-250 deg.C reaction temperature under 2.5-80 kPa degree of vacuum in the production of the fatty acid ester of the sorbitan, and further to provide an emulsifier comprising the ester. SOLUTION: This method for producing the fatty acid ester of the sorbitan having excellent emulsifying activities is provided.
