Zusammenfassung: | PROBLEM TO BE SOLVED: To provide a method for producing a yeast-originated soluble polysaccharide containing β-glucan useful as a functional ingredient in a large content in a high yield in a simple treatment process suitable for a practical production in a factory scale without needing a pressurizing-heating treatment process and further without requiring a complicated process such as a precipitation process using ethanol. SOLUTION: This method for producing the yeast-originated soluble polysaccharide containing the β-glucan comprises subjecting yeast to a 950 kg/cm2 high pressure homogenization treatment to crush the yeast, applying an autolysis treatment to the crushed yeast, washing the product, and then allowing a yeast cell wall-lysing enzyme such as Zymolyase to act on the obtained β-glucan-rich (mannose:glucose = 33 to 39:67 to 61) yeast cell wall fraction to produce a soluble polysaccharide containing a high molecule (MW 5,000 to 1,000,000):low molecule (MW 200 to 5,000) ratio of 40 to 60:60 to 40 in a high yield of 60 to 80% based on the dried product. The soluble polysaccharide has a serum hypocholesterolemic activity and an immunostimulating activity. |
