Zusammenfassung:	PROBLEM TO BE SOLVED: To provide a method for peeling the outer skin of chestnuts in high workability and productivity, without damaging the inner skin independent of the kind of chestnuts, high in work safety and the safety of the flesh obtained because of using low alkali concentration liquid, and capable of producing boiled chestnuts with the inner skin of a good palate feeling suppressing the inner skin discoloration and softening the inner skin, and to provide chestnuts with the inner skin. SOLUTION: This method for peeling the outer skin of chestnuts involves the step of soaking chestnuts with the skin in a 0.05-0.6 N, preferably 0.1-0.4 N aqueous alkaline solution of 10-35 deg.C, preferably 15-30 deg.C containing sodium hydroxide and/or potassium hydroxide.
