Zusammenfassung:PROBLEM TO BE SOLVED: To provide a new lipase that is heat- and acid-resistant and is useful for various uses in various fields, a method for producing the lipase, and a new yeast capable of producing the lipase. SOLUTION: The 1st objective lipase having (A) an action and substrate specificity of hydrolyzing the ester linkage of a glycerol ester to release a fatty acid, (B) an optimal pH range from pH 2.9 to 5.5 at 37 deg.C, (C) a stable pH range from pH 2.3 to 7.1 at 4 deg.C or 25 deg.C for 24 h, and (D) a molecular weight of about 47 kDa as measured by SDS-PAGE, is provided. The 2nd objective method for producing a lipase comprising the steps of culturing the yeast that belongs to the genus Kurtzmanomyces and is capable of producing the above lipase, and collecting the lipase from the culture, is provided. Kurtzmanomyces sp. strain I-11 (FERM P-18126) capable of producing the above lipase is also provided.
