Zusammenfassung: | PROBLEM TO BE SOLVED: To obtain a useful component derived from citrus fruits and capable of being efficiently concentrated and to provide a fermentation product usable as a food material derived from the natural product for preparing a food composition or a nutritional composition. SOLUTION: This method for concentrating the useful component contained in the citrus fruits is characterized by subjecting at least one of depulped citrus molasses obtained by depulping citrus molasses prepared by concentrating a pressed juice of a pressed residue of the citrus fruits or a fruit juice obtained by pressing the citrus fruits to an alcohol fermentation treatment. |
