Zusammenfassung:	PROBLEM TO BE SOLVED: To provide a method for producing already washed immersed rice, through which shape retention is given to each polished rice grain over its entire surface layer and also the taste of the cooked rice therefrom is prevented from being deteriorated due to rice grain cracking, by bringing inventive ideas to a drying treatment while making the best use of various advantages obtained through a rice-washing treatment in which polished rice is brought to high water content by washing polished rice using high-temperature water. SOLUTION: This method for producing already washed immersed rice comprises the following process: subjecting polished rice to a washing treatment so as to let the polished rice contain water to its center using high-temperature water so that the rice is brought to high water content of its entire surface layer through its center, and thereafter, conducting a slow-drying treatment in which the thus washed polished rice of high water content is slowly dried in a drying time longer than that for the washing treatment.
