Zusammenfassung: | PROBLEM TO BE SOLVED: To provide a method for producing a seasoning containing bovine Achilles tendons, by which the easily handleable seasoning having a high taste- reinforcing effect can be produced from the Achilles tendons as a raw material at a relatively low production cost. SOLUTION: This method for producing a seasoning containing bovine Achilles tendons, characterized by boiling the bovine Achilles tendons, finely cutting the boiled bovine Achilles tendons, adding and mixing cyclodextrin with the finely cut product, lyophilizing the mixture, and then finely grinding the lyophilized product. Therein, the boiling treatment is carried out by putting oxidation-resistant water in a ceramic-lined vessel and then heating the bovine Achilles tendons in the water.
