DRINK OR FOOD CONTAINING EMULSIFIER

PROBLEM TO BE SOLVED: To obtain an emulsifier-containing drink or food which does not have the bad taste and nasty odor of an emulsifier, has an excellent flavor, and is useful for healthy foods and so on by including an extract originated from sweet potato. SOLUTION: This emulsifier-containing drink or food contains (A) a sweet potato-originated extract which comprises a fraction obtained by allowing a raw material selected from a sweet potato juice, the solvent extract of sweet potato, and molasses originated from sweet potato to pass through a column charged with a synthetic adsorbent as an immobilizing carrier and then eluting the ingredients adsorbed on the synthetic adsorbent with one or more kinds of solvents selected from water, methanol and ethanol, and preferably further (B) one or more kinds of oil-soluble food raw materials selected from milk fats, animal fats, vegetable fats, vitamin E, vitamin A, vitamin D, vitamin K and β-carotene. The extract originated from the sweet potato is preferably compounded in an amount of 10 to 50 ppm without relating to the amount of an emulsifier, when an acidic drink is produced.
