SEPARATION OF SAKE FROM LEES

PROBLEM TO BE SOLVED: To provide a method for separating sake from the less, capable of obtaining the sake from a mixture of the clarified sake and the precipitated lees in the largest possible amount, and capable of simply treating the residual less, when the fermented sake is settled. SOLUTION: This method for separating sake from the less comprises feeding a filter bag (7) with a mixture of the clarified sake (2) and the precipitated less (3), binding the top of the filter bag, placing the top-bound filter bag (9) in a centrifugal separator, and rotating the centrifugal separator. Thus the sake (2) is separated from the mixture is a large amount by the action of centrifugal force due to the rotation.
