Zusammenfassung: | PROBLEM TO BE SOLVED: To obtain prawn Senbei (rice cracker), and the like, where odor peculiar to starch is removed or remarkably reduced, the roast aroma of the prawn is strengthened, and flavor and eating quality are excellent by including dough containing starch and prawn and seasoning containing L-arginine as essential raw materials. SOLUTION: This Senbei, and the like, comprise dough containing starch such as potato starch and tapioca starch and prawn such as Metapenaeus and Penaeus Indicus (banana prawn) and seasoning containing (preferably 1-99 wt.%) L-arginine as essential raw materials. The weight ratio of the dough to the seasoning is 100:(0.001-10). The concentration of L-arginine contained in the seasoning in the dough added with the seasoning preferably is 0.003-1 wt.%. An L-arginine-containing seasoning is preferably prepared for producing the prawn Senbei or prawn snack cake. |
