SOLUTION: A microorganism that belongs to Bacillus, has the activity of producing γ-polyglutamic acid and is deleted or reduced from the activity of glutamate synthetase, [for example Bacillus subtilis UT-1 (FERM P-17400)] is cultured in a culture medium including glutamic acid or its salt an the objective γ-polyglutamic acid is collected from the culture mixture, which is well know as threads of Natto and useful in many fields of foods, cosmetic, medicines and the like efficiently with increased production yield. |
