TABLET CANDY HAVING MODERATE HARDNESS AND CRISPINESS AND ITS PRODUCTION

PROBLEM TO BE SOLVED: To obtain a tablet candy having moderate hardness and crispness and spreading delicious taste in the mouth cavity by compounding respectively specific hard candy powder, binder and improving agent, etc., at specific ratios. SOLUTION: The objective tablet candy is produced by compounding (A) 20-100 wt.% (based on the total tablet candy, excluding 100 wt.%) hard candy powder having powder size of 3.5-34 mesh and prepared by boiling down a sugar and polydextrose and crushing the product, (B) 10-80 wt.% powder of edible binder having powder size of 3.5-70 mesh and produced by combining carboxymethylcellulose sodium, gum arabic, etc., (C) powder of edible lubricant to improve the moldability and (D) 1-15 wt.% powder of edible improving agent for imparting disintegrability, etc., having powder size of 3.5-70 mesh and composed of a combination of oligosaccharide, cellulose, etc. The component B and the component D are not same to each other when each of these components is composed of only one component and the sum of the components A to D is taken as 100 wt.%.
