SOLUTION: Mannose is produced by incubating a microorganism having mannan decomposing enzyme productivity in a medium including mannan to express a mannan decomposing enzyme, controlling the temperature of the cultured product and separating mannose from the medium by the action of the expressed mannan decomposing enzyme.
