Zusammenfassung:PROBLEM TO BE SOLVED: To obtain a new gene of aminopeptidase precursor-processing enzyme which codes for the precursor of aminopeptidase precursor-processing enzyme, consists of a gene containing a specific base sequence and is used in the production or the like of aminopeptidase useful for the production or the like of condiments. SOLUTION: This gene is a new gene, which codes for the precursor of aminopeptidase precursor-processing enzyme and contains the base sequence represented by the formula, and is useful in the production or the like of condiments containing peptides or amino acids as a main component. The gene of aminopeptidase precursor-processing enzyme is obtained by initially cultivating Aeromonas caviae strain T-64 in a culture medium, separating the enzyme from the culture supernatant obtained by taking off microbial cell bodies from the cultured product, determining the partial amino acid sequence in the both terminals, preparing a forward primer and a reverse primer on the basis of this sequence and finally carrying out the PCR reaction of the genomic DNA of Aeromonas caviae strain T-64 by the use of these primers.
