Zusammenfassung: | PROBLEM TO BE SOLVED: To obtain Nozawa (a kind of Brassia campestris L.) vegetable processed food capable of increasing antimicrobial action and germicidal action and provide a method for producing the processed food. SOLUTION: A first process (step 101) for uniformly laying Nozawa vegetable 2 in a pickling barrel 1 and a second process (steps 103 and 104) for sprinkling common salt 4 onto the Nozawa vegetable 2 laid in the first process so that common salt concentration becomes 2-5% and properly putting chili pepper are repeated. When Nozawa vegetable 2 is packed until a prescribed height of pickled barrel, heavy stone 6 having a prescribed weight is put thereon. In the first process among the such production process, a prescribed amount of leaf tea 3 of green tea is put on laid Nozawa vegetable 2 (in the step 102). Nozawa vegetable pickles in which Nozawa vegetable 2 and leaf tea 3 of green tea are salted can be provided thereby. Furthermore, drawn tea and powder tea may be salted instead of leaf tea together with Nozawa vegetable. Tea salted together with Nozawa vegetable may be not only green tea, but also Ureshino tea, Aoyagi tea, oolong tea, Houshu tea and black tea. |
