Zusammenfassung:PROBLEM TO BE SOLVED: To provide a method for producing a germfree boiled rice clear and white in appearances, excellent in taste and palate feeling, and retaining these good properties for a long-term preservation. SOLUTION: This production method comprises: immersing rice in water; sterilizing it by heating under high-temperature and high-pressure steam conditions in the presence of 1.0 to 4.0 vol.% of oxygen-containing gas; and then boiling the thus heat-treated rice.
