Zusammenfassung: | PROBLEM TO BE SOLVED: To provide a production method for a pattern-having frozen dessert, capable of imparting variation to the pattern without having a trouble of color flow and preparing the frozen dessert excellent in appearance by adding a composition containing a water dispersible pigment and a gelling agent into a calcium-containing mix for frozen dessert and stirring the mixture. SOLUTION: Into a mix for frozen dessert containing calcium such as calcium lactate (the use is preferably 0.005-2 pts.wt. based on 100 pts.wt. of the mix for frozen dessert), a water-dispersible pigment such as Food Red No.2 and a pigment composition-containing one or more kinds of gelling agents (the use is preferably 0.01-2 pts.wt. based on 100 pts.wt. of the pigment-containing composition) selected from the group consisting of pectin, alginic acid (salt) and gellan gum are added, and the mixture is stirred and mixed to obtain the objective pattern-having frozen dessert. Further, the frozen dessert is preferably a dairy product or one or more kinds selected from ice cream, ice milk, lacto ice, frozen yogurt, ice cake, sherbet, ice candy and sleety ice. |
