Zusammenfassung:PROBLEM TO BE SOLVED: To provide an incision system designed to mechanize the incision operations for the digestive organs and the like extracted from a slaughtered animal body such as of cow to reduce the cost associated therewith and favorably maintain the hygienic environment in the plant. SOLUTION: This incision system works as follows: the vicinity of the incision site of an internal organ placed on a pretreatment table is nipped with the nipping members 16, 17 of a clamping device 9, which, in turn, is moved toward the downstream side of the movement path by the aid of a clamp moving device; as the clamping device 9 moves, the internal organ is gradually conveyed from its charge port onto a treatment table inside the system; as the internal organ is conveyed by the clamping device 9, the edge of a knife 11 supported on a knife support device 12 passes through the respective guide grooves 16d, 17c of the nipping members 16, 17 and is forced into the gap 16b of the nipping member 16 by the action of a projection 17b, thereby the upper side stomach wall of the internal organ is incised approximately in the same direction as that of the movement path of the clamping device 9.
