Zusammenfassung: | PROBLEM TO BE SOLVED: To freely adjust hardness of oils and fats without compounding of oils and fats, hydrogenation, transesterification, fractionation or the like by incorporating a fatty acid ester having a specific number of carbons as an oil-and-fat solidifying agent into oils and fats as a raw material for powdery oils and fats. SOLUTION: As an oil-and-fat solidifying agent is employed a fatty acid ester having 20 or more carbons. As examples thereof can be exemplified esters of arachic acid, behenic acid or the like with propylene glycol, glycerol, sorbitan, pentaerythritol, diglycerol or the like. Joint use of a polyglycerol ester of a fatty acid and/or a sucrose ester of a fatty acid, each having an HLB of 3 or less, with the oil-and-fat solidifying agent makes it easier to solidify oils and fats and to adjust hardness thereof. As the polyglycerol ester of a fatty acid having an HLB of 3 or less can be exemplified triglycerol pentastearate, and as the sucrose ester of a fatty acid having an HLB of 3 or less can be exemplified palmitate ester of a sucrose. |
