Zusammenfassung: | PROBLEM TO BE SOLVED: To freely adjust hardness of oils and fats thereby improving texture of food containing the oils and fats by employing a solidifying agent containing an ester of a fatty acid bearing a specific number of carbons. SOLUTION: This oil-and-fat solidifying agent comprises an ester of a fatty acid having 20 or more carbons. Joint use of a polyglycerol ester of a fatty acid and/or a sucrose ester of a fatty acid, each having an HLB of 3 or less, makes it easier to solidify oils and fats and to adjust hardness thereof. Fatty acid esters having 20 or more carbons are, for example, esters of arachic acid, behenic acid or the like with propylene glycol, glycerol, sorbitan, pentaerythritol, diglycerol or the like. As the polyglycerol ester of a fatty acid having an HLB of 3 or less can be exemplified triglycerol pentastearate, and as the sucrose ester of a fatty acid having an HLB of 3 or less can be exemplified palmitate ester of a sucrose. The adding amount of the oil-and-fat-solidifying agent is preferably 0.5-10% in terms of effective components based on the oils and fats. |
