Zusammenfassung:PROBLEM TO BE SOLVED: To efficiently obtain high-quality D-mannose in a high yield from a mannan compound obtained from other than the seed of ivory nut. SOLUTION: A mannan compound containing >=40 wt.% D-mannose derived from guar and carob of pulse family and/or tare of the family Actinidiaceae is hydrolyzed with an acid to liberate and form >=50 wt.% mannan compound as a monosaccharide.
